Ingredients
| 1 heaping teaspoon ground coffee (available at SUNNY Grocery) |
| sugar (1 teaspoonful sugar for sweet coffee, make it ½ for medium, ¼ for light, and none for black) |
| ¼ cup cold water (or measure with demi-tasse to be served) |
Place coffee and sugar in a small cezve (pot with a long handle, preferably brass, copper or enamel), add water and mix them together. Cook on a very low heat, stirring occasionally until the froth on the surface starts rising. Pour a small amount of froth into a demi-tasse. Return pot to the heat and bring it to a boil. Pour remaining coffee into the demi-tasse until it reaches to brim. Afiyet Olsun! (Bon Apetit!)
For more than one demi-tasse, multiply the above ingredients by the number of cups and pour a little froth into each cup first. Do not drink the thick residue remaining at the bottom of the cup. Leave that to a fortune-teller for interpretation!
If you cannot obtain ground coffee, you can roast coffee beans in a pan or in the oven, stirring occasionally until the preferred darkness is obtained. Then the beans are ground in a Turkish coffee grinder or in an ordinary coffee grinder until it becomes pulverized. Ground coffee should be stored in a tightly covered jar. It will lose its freshness in a few weeks.
